Executive Chef

Job Summary:

The Executive Chef is responsible for the business performance of Au Naturale’s Bar and Lounge, as well as maintaining high standards of food, service, health, and safety. The Executive Chef will also be responsible to plan, organize, direct, and coordinate the menu, employees, and resources of the resort’s bar and lounge for the efficient, well-prepared, and profitable service of food and beverages.

Essential Duties and Responsibilities include the following. Other assignments, projects, and duties may be required:

 

  • Work with the resort owner, cooks, kitchen staff, and other personnel to plan menus that are flavorful and popular with customers. Work with cooks for efficient provisioning and purchasing of supplies. Estimate food and beverage costs. Supervise portion control and quantities of preparation to minimize waste. Perform frequent checks to ensure consistent high quality of preparation and service. (40%) )
  • Supervise the operation of the kitchen and bar to maximize profitability, minimize legal liability, and conform to alcoholic beverage regulations. (20%)
  • Follow sanitation guidelines and adhere to safety procedures. (20%)
  • Direct hiring and training of food service personnel. (10%)
  • Investigate and resolve complaints concerning food quality and service. (10%)

Sous Chef

Job Summary:

The Sous Chef is responsible for the business performance of Au Naturale’s Bar and Lounge, as well as maintaining high standards of food, service, health, and safety. The Sous Chef will assist the Executive Chef with planning, organizing, directing, and coordinating the menu, employees, and resources of the resort’s bar and lounge for the efficient, well-prepared, and profitable service of food and beverages.

  • Work with the executive chef, cooks, kitchen staff, and other personnel to plan menus that are flavorful and popular with customers. Job Summary:

Cook’s responsibilities include preparing food to order, cleaning workstations, ensuring the use of quality ingredients, and processing ticket orders in a timely manner. Ability to work well under pressure and keep the kitchen staff on task. Specific job duties involve operating an oven, grill, or microwave, cutting meat, washing vegetables, and arranging food once prepared. Work as a team to make delicious and eye-appealing food for our customers in a timely fashion.

  • Delight our guests by providing quality and timely prepared foods. (40%)
  • Check food and ingredients for freshness and arrange and garnish dishes (20%)

Job Summary:

Responsible for providing quality guest service as it pertains Au Naturale’s lounge service. ­­The Kitchen Assistant’s primary focus is to help the cook with ingredient preparation as well as perform all washing and cleaning duties required in the kitchen. Secondary focus includes assisting with inventory control and ensuring food and ingredients are always fresh. The ideal candidate is able to exercise exceptional time management and works well in a team.

 

Essential Duties and Responsibilities include the following. Other assignments, projects, and duties may be required:

  • Organize the kitchen, clean dishes, and help with basic food prep, including washing, peeling, cutting, mixing, weighing and measuring, etc. (30%)
  • Support Lounge and Bar staff as necessary, by delivering food and clearing tables (30%)
  • Receives, stacks, and properly store food in the kitchen, cold storage, and storerooms. (20%)
  • Stock and rotate food, always date stock, and ensure food and ingredients are fresh. (10%)
  • Properly clean and sanitize all surfaces in the kitchen (floors, countertops, cutting boards, etc.). (5%)
  • Monthly food storage area cleaning, daily garbage removal, and note food wastage from customers. (5%)

Guest Services

Job Summary:

Responsible for providing quality guest service as it pertains to checking in/out of hotel guests; PBX operations to include mail/message service; making hotel reservations, and concierge services in a gracious and professional manner. They must also inform all guests of the resort’s amenities and rules. Guest Services Clerk needs to be able to help all visitors with information of the surrounding area which guests may be unfamiliar with. When a guest leaves, Guest Services must inform the housekeeping staff which rooms need to be cleaned and re-stocked. The guest Services Clerk is also responsible for tracking daily and monthly resort passes sales.

  • Welcome guests as they walk in, in a confident, professional, and friendly manner. Check-in guests staying overnight, provide all guests with information on amenities, rules, and hours. Handle payments made by guests (30%)
  • Find the correct help for guests that ask. This may involve contacting maintenance, room service, or managers to handle diverse issues or complaints. (20%)
  • Sell passes and assist pass holders and lounge guests with locating the showers acquiring a temporary locker. (20%)
  • Initiate courtesy call after check-in to ensure the guest is satisfied with accommodations as well as offer any assistance. (10%)
  • Assist guests in making travel arrangements and provide information for those who are unfamiliar with the area surrounding Au Naturale. (5%)

Responsible for providing quality guest service as it pertains to the Au Naturale lounge. The Bartender’s main duties will be to mix and serve drinks to customers. Adding to the atmosphere and experience by providing professional and pleasant interactions with each visitor. Making sure visitors enjoy their time while also following the rules. The bartender is also required to collect payment and assist customers and provide customer service up to Au Naturale standard.

  • Mix ingredients to prepare cocktails and mixed drinks for customers. (25%)
  • Check customer identification to verify age requirements. (20%)

Assistant Manager

Job Summary:

Liaison between staff and the General Manager. The Assistant Manager coordinates basic functions and makes sure employees work is satisfactory. Arranges schedules to accommodate needed shifts/availability to ensure an operational smooth-running resort, trains staff members to be knowledgeable in their individual positions, and delegates jobs accordingly. Reports all knowledge of company/employees to the owner. The Assistant Manager will be responsible to ensure compliance with all regulatory requirements.

  • Assist with managing the entire resort operations on the daily basis, with a focus on the resort department staff.
  • Make sure to adhere to and champion the full and total compliance of resort SOPs, operating controls, local regulatory requirements, procedures, service standards, and policies.
  • Review the performance of staff as well as conducting personnel and disciplinary actions.
  • Distribute duties to staff and observe each performance to make sure that they follow established procedures and policies of the resort.
  • Build loyalty and positive relationship through active setting, management, and communication as well as delivering results.
  • Act as the public relation director to promote the resort to both the target community and local area.
  • Help the Owner during routine or morning meetings or conducting the meetings
  • Work with the Marketing representative to monitor and oversee the guest feedback and reviews on resort’s website – as well as other third-party services, such as Trip Advisor and other sites.

Job Summary:

Responsible for generating sales, meeting certain goals, and increasing client traffic to both the resort and lounge. The Marketing Associate’s primary focus will be on developing the business through new client acquisitions, partnering with vendors, selling daily and monthly passes, and tickets to special lounge events. The secondary focus will be on monitoring and promoting Au Naturale’s social media pages and online presence. A creative, self-motivated, and determined personality is required for this inside and outside sales position.

  • Engage in new marketing/promotion techniques in order to increase traffic and sales. (30%)

Job Summary:

Responsible for providing quality guest service as it pertains to keeping our guests and staff safe. The Safety and Security Responder provides skilled emergency and non-emergency services in a variety of areas including responding to and implementing emergency medical procedures, investigate disturbances, and addresses any security/safety concerns. Providing immediate response to any potential issues and communicates with the appropriate authorities thereafter, as needed.

  • Circulate among the guests and employees, within the resort, to preserve order and protect people and property. (40%)

Job Summary:

Grounds Maintenance staff is essential to keeping Au Naturale clean for our guests to enjoy. Responsible for maintaining the property in top condition to ensure full and productive use of all the resort’s rooms and amenities. Performs a variety of preventative maintenance of resort equipment. Participates in grounds maintenance including pool cleaning, brush and trash removal, and assists guest services and housekeeping as needed.  

 

Essential Duties and Responsibilities include the following. Other assignments, projects, and duties may be required:

 

  • Walks the entire property cleaning and disinfecting all surfaces, sweep and clean courtyard, locker room, and restrooms (30%)
  • General scheduled maintenance of the pool, pool filters, spa, sauna, on indoor facilities (30%)
  • Clean and restock restrooms (15%)
  • Keep outside areas free of trash and debris (10%)
  • Clean and tidy lobby and all public outdoor areas, layout rubber mats when it rains (5%)
  • Collect trash and recycling from facilities (5%)
  • Support team with various tasks and spot cleaning whenever necessary (5%)

 

Qualifications:

  • Applicant must be 18 years or older.
  • At least 6 months experience in a similar capacity.
  • Be able to work in a standing position for long periods of time (up to 5 hours).
  • Ability to perform assigned duties with attention to detail, speed, accuracy, follow-through, courtesy, cooperativeness and work with a minimum of supervision.
  • Ability to satisfactorily communicate in English and Spanish (speak, read, write) with guests, co-workers, and management to their understanding.
  • Ability to accurately compute and manipulate mathematical calculations.
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists
  • Ability to effectively deal with internal and external customers, some of whom will require high levels of patience, tact, and diplomacy to defuse anger.
  • Ability to work well under pressure and handle multiple tasks at once.
  • Ability to grasp, bend, and stoop; push or pull heavy loads weighing up to 75 lbs.; and lift and/or carry or otherwise move bags, boxes, and luggage.
  • Punctuality and regular and reliable attendance.
  • Ability to embody and work professionally within the resort’s unique theme and atmosphere
  • Honesty and Integrity
